(Please read the following to the tune of “nanny-nanny boo-boo!”)

I’m chasing a deadline! I’m chasing a deadline!

BUT: I still made it to the MORNING group run today, and killed 10K before the time I usually leave the house…

After which, as I hunkered down to work, I needed a li’l pick-me-up:

1. two lovely farmers’ market Gala apples, cored and halved… dressed with 1/4 cup of oats, 1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/2 tsp vanilla extract, and 1/2 Tbsp packed brown sugar, split evenly between the four halves and dotted with shaved butter…

2. baked at 375°F for 15 minuts (I like ‘em a bit crisp still)

3. served cut up, with a dollop of honey-vanilla yogurt cheese (more vanilla than honey!)…

Sweeeeet. :)

Brace for an intense week ahead!

    Thanks! And unbelievably satisfying alone, as a protein-pancake topper, or, if I ate oatmeal I imagine I’d like it as the topping there, too!

    @ Erica–thanks! I wanted more apple than crisp, so this seemed like a good alternative to apple crisp. And they’re fab!

    This looks delicious! I love the idea of baked apples..perfect for fall.
    For a quick treat, chop an apple and sprinkle with cinnamon and warm in the microwave. Not as good as what you made, but a different spin on your plain apple.

    @ Kristen: smart! If I only had a microwave!! :D But for an at-work treat, that sounds like a winner. Something about warm apples makes my heart sing…

    such a great idea! I think I’d have to bake mine a bit longer since I like mine a little on the tender/mushy side :) I tried to be productive, but lack of sleep, travel and fighting off getting sick left me pretty useless on Sunday, ah well. Hopefully I’ll tackle the century regardless!

    i’ve always wondered how group runs work, i mean, you all try to run the same pace? what if someone wants to go faster (or slower?)

    productive, yes. i finally got my hair coloured (after putting it off for WAY too long) and i booked our flights to New Zealand! woo hoo!!

    @ Kath: danke auch! Mein deutsch ist aber wirklich schlecht (mein Professor beim Goethe Institut hat gesagt “Du sprichst sehr fluessig, aber Dein struktur ist noch nicht ausreichend…” Und das stimmt!!), aber ich liebe es! Ich habe gelernt um zu lesen, weil ich Deutsche Geschichte studiert im Uni habe. Dann war ich ein Jahre in Freiburg-i-B, und ich muesste sprechen—Englisch uebersetzt! Man hat mich verstehen, aber es ist noch schlecht. Anyway… sagt man “Germanophile”? Das bin ich, und deshalb kann ich auf Deutsch. :) I look forward to reading you, too!

    @ Angela: Well, the group started out with 9 of us. We all started together, but 4 did only the first 3 K, and then stopped for coffee. Of the rest of us, two VERY tall men quickly separated from the group and went speedy fast, and I stayed with a group running a moderate pace. One of the guys with us hadn’t run in awhile and felt we were a bit quicker than he’d want, but he kept up–and he did the full 12.3 while I left them at kilometre 9 and did the last one by myself… didn’t want a longer run than that. So, it’s pretty relaxed in terms of distance and pace, and the bigger the group, the more likely there will be people huffing it at the speed *you* want.

    Colouring hair is a big win, eh? Congrats on that–that alone is a successful weekend! Can’t wait to hear more about NZ!
