Tomorrow is Saturday! What makes it even better is that I’m hanging out with my old massage therapist, Leanne. She moved from Hinterlandia to Vancouver Island on the waterfront (poor girl!) a year ago, and I’ve yet to find a replacement as either a friend or a massage therapist.

I *have* had great luck with massage in North Van, it should be said: if ever in need, see Christina at Avita Massage Therapy on Lonsdale Ave. She’s awesome! Not only has she given me great massages—but she reminded me that if I don’t spend more time stretching, I’ll become a shrivelled old crone (like that <—, Rodin’s La Belle Heaulmièresource). Best case scenario, of course.

Tonight’s dinner was necessarily going to include one particular ingredient: spinach. I have a hard time staying on top of a tub of spinach as a single diner, and there’s nothing worse than when half of it is liquifying and fusing to the other half that still has a breath of life left in it… so there comes a point on the eve of spoil when nothing I eat escapes the green.

Spinach with spinach and a side of épinards is just dull, though… so what to put on top?

Whatever’s in the fridge! In this case, Gardein patties and, feeling festive, I whipped up some mango (summer!) salsa.

(This is actually Tara’s recipe, but I’ve commandeered it as best as I can)…

Summer Salsa

Ingredients

  • 1 ataulfo mango, cubed
  • juice of 1 lime
  • rounded 1/2 cup of black beans (I used leftover adzuki and black, mixed)
  • 1/2 red pepper, chopped
  • 1/4 cup red onion, minced (or finely chopped)
  • optional: 2 tbsp cilantro
  • optional: a whack of peas from the pod… why not?

dump in bowl and stir… delicious over pretty much everything! Tara likes it on chicken breasts, while I’d sooner eat my own left foot… but since I think I’m going to need it, I went with Gardein patties (cutlets?) and spinach.

I may or may not have had a little tequila with it, (¡Olé!) which I would like to say is my celebration of a super-efficient work day… but I think I’m just in touch with my inner bad-ass since realising I like an Eminem song.
